I cooked this last night.. really quick and easy. It is very healthy and I learnt to cook this from my dad, who is to this day a keen fisherman. You can finish making this dish in under 30minutes. I guess if you don’t like whole fish, you could use filleted fish but I really think this recipe is best with a whole fish.
Recipe for Asian steam fish (Dad’s recipe)
Ingredients:
1 kg whole fish (any type as long as it is suitable for steaming, get the fishmonger to clean it)
1 tomato
For sauce:
around 4 cm of ginger root, sliced into fine strips
1 clove garlic, chopped finely
light soy sauce (5 tablespoons)
pepper (pinch)
sesame oil (1 tablespoon)
3/4 sprigs of coriander, stem and leaves (half chopped finely, the rest is for decoration)
Steps:
1) clean fish and cut away unnecessary fins with scissors. rub the fish with salt and wash the fish with water.
2) slice tomato in neat slices (about 1cm thick) and lay the slices on a large plate.
3) place the fish on tomato slices
4) steam fish for 15mins
5) For the sauce: fry ginger slices and garlic in oil (I use light olive) until slightly brown, then add 5 tablespoons of light soy sauce, a pinch of pepper and a tablespoon of sesame oil.fry until the sauce slight thickens in a few mins, then put in the chopped coriander and quickly put the sauce into a bowl.
6) When the fish is cooked, drain away most of the water that forms on the base of the plate, then place spoonsful of the sauce over the fish until the sauce is all used up. Sprinkle some coriander leaves on top.
7) Viola, enjoy!I enjoy the crispiness of the ginger and garlic with the tender texture of the fish. My photo is below ..
